For gluten-free cheesecakes, the substitution is in the crust: a graham cracker crust is replaced with a California almond flour crust pressed with real cultured butter. This substitution addresses the gluten-free requirement without compromising structural integrity or flavor — almond flour at the right grind and ratio with butter produces a crust with sufficient firmness to support the cheesecake filling during cutting and serving. The cream cheese filling formula is identical to our traditional cheesecake: full-fat California cream cheese, fresh eggs, real sour cream, real vanilla bean paste. For gluten-free cakes, the substitution is in the batter: California almond flour replaces wheat flour as the primary structural ingredient, supplemented with tapioca starch as a binding agent. The result is a cake with a noticeably moist and tender crumb that many customers prefer to the wheat-flour original.
