Chocolate Cordials & Fruit Chocolates: Liquid-Center Confections from Chino, California
Chocolate cordials sit at the intersection of confectionery and theater: you bite into what appears to be a standard chocolate-enrobed piece and encounter a liquid center that has been sealed inside the shell since production. The effect — the burst of liquid against the chocolate shell — is a specific technical achievement that requires a shell thickness calibrated to hold the liquid without cracking during shipping while remaining thin enough to shatter cleanly on first bite. Andy Anand's cherry cordials are produced in our Chino, California kitchen using whole cherries, liquid centers, and a hand-built Belgian 60%+ cacao dark chocolate shell.
The chocolate-enrobed fruit range extends beyond cordials to include chocolate-covered California ginger, chocolate-covered California espresso beans, and California orange peel candied in the European tradition and enrobed in Belgian 60%+ cacao dark chocolate. Each of these products requires a different enrobing approach: ginger needs a thicker shell to manage the moisture migration from the candied piece into the chocolate; espresso beans need a thinner shell so the crunch of the bean and the snap of the chocolate are experienced together; orange peel requires a soft enough bite through the chocolate that the peel's texture registers. These are production decisions made per ingredient, not a single enrobing process applied uniformly.
