Artisan Candy & Confections: European Imports & California Originals

Between chocolate and cake lies an entire world of confectionery with its own distinct traditions, techniques, and pleasures — a world of concentrated fruit jellies, spun and pulled sugar, soft chewy formats, crisp hard candies, and specialty pieces whose character comes from ingredients and processes entirely different from either the chocolate-making or the baking traditions. Andy Anand’s Confectionary & Candy collection represents this world at its most interesting: importing the finest European candy traditions, producing California originals, and curating a range that reflects genuine understanding of what makes great candy great — rather than merely sweet.

Our most distinctive products are our imported European specialties. French pâtes de fruits — traditional jeweled fruit jellies made with concentrated fruit purée and natural pectin, dried to specific moisture content and dusted with granulated sugar — represent one of the highest forms of French confectionery. Our pâtes de fruits are imported directly from French producers who maintain traditional methods: fruit purées concentrated to genuine intensity, natural pectin as the setting agent, a texture that yields slowly under the teeth with a burst of concentrated, unmistakably real fruit flavor that artificial-flavored candy cannot approximate. Seasonal flavors reflect what French confectioners are making at each fruit’s peak.

Calissons de Provence — the almond-paste candies of the French Riviera with Protected Designation of Origin status — are another centerpiece of our candy range. These flattened, diamond-shaped confections made from ground almonds and candied melon, covered with royal icing glaze, have been made in Aix-en-Provence since at least the 15th century. Our calissons are imported directly from Provence, where they are still made by artisan producers using the traditional recipe and the specific regional candied melon. They are an extraordinary discovery for anyone encountering the form for the first time, and a reliable pleasure for those who know them well.

Our candy range also includes specialty licorice assortments imported from Denmark and the Netherlands — regions where licorice is treated as a serious category with genuine quality distinctions between salty, sweet, soft, and hard formats — as well as California-original candy formats developed in our Chino kitchen. All products in our traditional candy collection are made without artificial colors, artificial flavors, and the preservative systems that define commercial candy manufacturing. This is candy as it existed before industrialization made it cheap and uniform.

Every product ships nationwide from our Chino, California facility. Hard candy and most specialty formats ship at ambient temperature with protective packaging; temperature-sensitive specialty pieces ship with cold-pack protection. No artificial preservatives. For the curious palate that has exhausted the conventional candy category — this collection provides something more interesting, more varied, and more genuinely excellent.
