Sugar-Free Keto Chocolate Bars: Belgian 60%+ Cacao, Low Net Carbs

The keto-compatible chocolate bar market is defined by a single quality problem: most products use maltitol as the sweetener. Maltitol has a glycemic index of approximately 36 — high enough to raise blood glucose in diabetic customers and to produce an insulin response that breaks ketosis in ketogenic dieters, despite being marketed as sugar-free and keto-friendly. Andy Anand does not use maltitol. Our sugar-free keto chocolate bar range uses erythritol-stevia sweetening with a glycemic impact that is genuinely negligible, combined with the same Belgian 60%+ cacao we use in our traditional bar range.

The erythritol-stevia system was calibrated specifically for chocolate bar applications. Chocolate bars require a different sweetener ratio than ganache or baked goods: the chocolate is consumed directly, without the dilution effect of cream or flour, which means the sweetener's flavor characteristics are fully exposed. Erythritol in chocolate bars can produce a cooling sensation at high concentrations; stevia can produce bitterness. The calibration that eliminates both while maintaining the correct sweetness level requires formulation work specific to direct-consumption chocolate applications. Our bar formulas were developed through this process and produce bars that are not distinguishable from our traditionally sweetened Belgian chocolate bars in blind evaluation.
